Oven Baked Fish

This is an elegant dish for entertaining guests.
Whole fish can be used like Snapper, Blue Cod, Alfonsino, John Dory, etc. instead of fillets. Fish fillets can be used like Hapuka, John Dory, Blue Cod (skin off or on)

Ingredients:
1kg Fish fillets 2 large onions, chopped
2 celery sticks, chopped 4 carrots, cut into small dice
1 tbsp super fine sugar 2 bay leaves
2/3 cup olive oil 4 large ripe tomatoes peeled, seeded and chopped
2/3 cups dry white wine salt and ground black pepper

Method:

1) Preheat oven to 190 C or 375 F, Gas 5. Heat olive oil in a large frying pan; add chopped onions and celery; add garlic, cook for 2 minutes or more; stir in potatoes and carrots; cook for about 5 minutes stirring occasionally; sprinkle with sugar and season to taste with salt and ground black pepper.

2) Spoon the vegetable mixture into oval or rectangular ovenproof dish slightly larger than the fish. Tuck in the bay leaves. Season fish and place on vegetable with skin side up. Spread chopped tomatoes over the fish. Then pour wine over. Bake 30-40 minutes until fish cook through.
